Recipe: Energy Balls with WILD ORANGE Essential Oil

I've been a fan of "energy balls" for awhile.  It probably stems from my love of eating raw cookie dough...yum! These remind me of cookie dough, but are actually good for you! Energy balls are great when I'm running errands or running kids around, and I need a quick bite that will keep me from grabbing something not so good for me. They keep me away from the drive-thru. I can pop a couple of these in a ziploc in my purse, and not feel guilty about my choice of snack! I've had others that were made with peanut butter. These are made with almond butter, which I ALSO love, but you could swap it out for peanut butter if you wanted to.

Ingredients:

  • 1 cup finely shredded coconut, divided (if all you have is the coarse stuff, you can give it a whirl in the food processor or blender to make it finer)

  • 1 cup almond butter

  • 1 cup dried cranberries

  • 1/2 cup raw honey

  • 1/2 teaspoon salt

  • 2 tablespoons chia seeds

  • 3 drops Wild Orange essential oil (ORDER HERE at 25% OFF)

Place all ingredients into mixer except for 1/2 cup shredded coconut.  Mix well. Roll into balls and coat in the other 1/2 cup shredded coconut. Store in the refrigerator.
